Introduction

The Korea Food Research Institute (KFRI) is a Government-affiliated research institute established in 1988 for the realization of Healthy Korea by providing people with wholesome food and by contributing to the improvement of the national agriculture, fisheries and food industries through advanced food science and technology. Today food is not consumed for survival per se but for the enhancement of health and prevention of disease which lead to good quality of life. The food industry should create a healthy national economy through value-addition to products from agriculture and fisheries. With these facts in mind, KFRI aims to achieve the following goals: - to carry out research on functional food, food safety, and food nano-technology through the development of emerging and original technologies for the improvement of people's health and quality of life. - to work on the globalization of Korean traditional foods and to add value to agricultural and fisheries products for high-industrialization of agriculture and fisheries and to - operate various industrial supporting systems to establish public-based technologies for the achievement of the Nation's strategic goals. In addition, KFRI endeavors to lead the future of the national food industry and to be the birthplace of ting-edge food science and technology by developing convergence technologies with IT, BT, NT, ST, and medical science through the establishment of cooperative networks with foreign and domestic universities, research institutes and industry.
